French Canadian Pancakes
Ingredients
- 2 cups all purpose flour
- 2 tsp baking soda
- 2 tsp white sugar
- 1/2 tsp salt
- 2 eggs
- 3 tablespoons melted butter
- 2 cups milk (or buttermilk)
- Butter for frying
Directions
- In a large bowl, sift dry ingredients together.
- Beat eggs into melted butter.
- Add milk and egg mixture to dry ingredients, then mix together (the mixture may be a little lumpy).
- Cook the pancakes in a skillet on medium heat until bubbles appear on the uncooked side, then turn over to cook the other side.
