Lemon Yogurt Cake
Ingredients
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 salt
- 1 cup plain yogurt
- 1 cup sugar + 2/3 cup sugar
- 3 eggs
- 2 tsp lemon zest (2 large lemons)
- 1/2 tsp vanilla extract
- 1/2 cup vegetable oil
- 1/3 cup freshly squeezed lemon juice (2 large lemons)
Directions
- Sift together the flour, baking powder and salt in a bowl
- In a separate bowl, whisk together the yogurt, 1 cup sugar, eggs, lemon zest and vanilla
- Slowly whisk the dry ingredients into the wet ingredients
- Fold the oil into the batter, making sure it's all incorporated
- Pour batter into a lined pan and bake at 350° F for about 50 minutes, or until inserted toothpick comes out clean
- Meanwhile cook the 2/3 cup sugar with the lemon juice in a pot until the sugar is completely dissolved
- When the cake is done, allow it to cool for 10 minutes, then pour lemon juice mixture over it and allow it to soak in
