Lemon Yogurt Cake

  1. Sift together the flour, baking powder and salt in a bowl
  2. In a separate bowl, whisk together the yogurt, 1 cup sugar, eggs, lemon zest and vanilla
  3. Slowly whisk the dry ingredients into the wet ingredients
  4. Fold the oil into the batter, making sure it's all incorporated
  5. Pour batter into a lined pan and bake at 350° F for about 50 minutes, or until inserted toothpick comes out clean
  6. Meanwhile cook the 2/3 cup sugar with the lemon juice in a pot until the sugar is completely dissolved
  7. When the cake is done, allow it to cool for 10 minutes, then pour lemon juice mixture over it and allow it to soak in
