Chili Beans
Ingredients
- 1 cup pinto beans
- 1 tsp salt (for beans)
- 1/2 lb onion, chopped
- Oil for frying
- 5 cloves of garlic
- 1 tsp peri peri
- 1 lb ground pork or beef
- 1 tsp salt
- 1 tbsp sugar
- 1 can tomato paste (156 mL)
- 500 ml water
- 1 tbsp no-salt seasoning
- 1/2 tbsp paprika
Directions
- Rinse beans and soak overnight in 4 cups water.
- Drain and rinse beans.
- Cook in a medium saucepan with 3 cups water and salt.
- Bring to the boil, then simmer for 50 min or until cooked
- Drain beans then set aside
- In a medium saucepan fry the onions, garlic and peri peri on medium heat until golden brown
- Add meat and salt, and cook at medium heat until meat is browned.
- Add sugar, tomato paste, water, no-salt seasoning, paprika, and beans.
- Cover and simmer for 45 min, stirring occasionaly.
