Beef and Barley Stew
Ingredients
- 1 lb onion, chopped
- 6 cloves garlic
- oil, for frying
- 1 1/2 lbs short ribs
- 1 1/2 tsp salt
- 1 can tomato paste (156 mL)
- 2 tbsp balsamic vinegar
- 1 tbsp basil
- 1/2 lb pot barley, washed
- 4 cups, boiling (add more as required)
Directions
- Fry the onions and garlic on medium heat until golden brown
- Add beef and salt and cook on medium heat until beef is browned
- Add tomato, vinegar, basil, barley and water
- Bring to the boil, then simmer until the barley is cooked
